Welcome to a week of simple and delicious health-conscious dining with our latest WeightWatchers-friendly meal plan.

Every Friday, I send out an email outlining my dinner plans for the upcoming week that are compatible with Weight Watchers, and I also publish them on my blog. This practice helps me stay on track with my meal choices and motivates me to make healthier food decisions.

Planning and preparing your meals ahead of time provides tons of benefits to anyone wanting to eat better and lose weight, including WeightWatchers members:

Reduced Impulse Eating: Knowing what you’ll cook and eat in advance helps reduce impulsive decisions and unhealthy food choices, such as hitting the drive-thru or ordering takeout. Every time I get out of the meal planning habit and resort to take-out, restaurants, and snacking on junk, it’s amazing how crappy I feel and how quickly the pounds pack on.

The Key to Eating Well is Cooking

When you’re trying to eat well, not cooking isn’t an option. At least for me anyway. There are just too many unknowns (hidden sugar, flour, fats, chemicals, points), too many temptations, and portions are way too large for you to routinely eat well on take-out or pre-made food.

The Key to Consistent Cooking is Planning

Rotisserie Chicken

Air Fryer Rotisserie Chicken – I’m a big fan of roast chicken. It’s easy and we can enjoy several meals with the leftovers. I’ll serve it one day with this crunchy, flavorful Broccoli Salad. If if you don’t have an air-fryer or don’t feel like cooking, you can always pick up a rotisserie chicken from your favorite supermarket or Costco. Something I do often. 

Leftover Ham Bone Soup

Leftover Ham Bone Soup (Using Bone I had stashed in the freezer) – An easy and delicious way to use up a holiday ham bone. Load your slow cooker and let it do all the work while you get on with your day. I’ll serve it with leftover broccoli salad and cornbread.

Skinny Chicken Broccoli Casserole (made with leftover rotisserie chicken) – This skinny chicken broccoli casserole is a lightened up version of my Mom’s yummy creamy cheesy chicken broccoli casserole from childhood. I love it now as much as I did then. I’m planning to serve it with Baked Potatoes and Cucumber Salad.

Chicken Avocado Salad

Chicken Avocado Salad – This chicken salad is another easy, healthy and delicious recipe, perfect for using up leftover cooked chicken. It’s from The Short-Cut Cook: Make Simple Meals with Surprisingly Little Effort by Jacques Pépin. In the recipe’s notes, Jacques says that this chicken avocado salad is a great way to use leftover chicken. I couldn’t agree more. I’ll serve it leftover cornbread.

BLT Avocado Toast

BLT Avocado Toast – This delicious BLT Avocado Toast is topped with fresh avocado, hard-boiled egg, tomato, bacon crumbles, sprouts and everything bagel seasoning. It’s perfect for a light supper with fresh fruit. If you are extra hungry a mug of WW zero point vegetable soup would be delicious alongside.
